鼠李糖乳桿菌為革蘭陽(yáng)性厭氧菌，無(wú)質(zhì)粒；不能利用乳糖，但可代謝單糖；在厭氧情況下能很好生長(zhǎng)，在有COz存在的情況下也能生長(zhǎng)。LGG可溶性蛋白的電泳模式和干酪乳桿菌鼠李糖亞種相似，但它不同于那些不發(fā)酵乳糖、麥芽糖或蔗糖的亞種。LGG產(chǎn)生少量醋酸和大量乳酸，抗生素敏感性測(cè)試表明LGG對(duì)青霉素、氯林可霉素、紅霉素、萬(wàn)古霉素、四環(huán)素和氯霉素敏感，而對(duì)滅滴靈有抗性。LGG在LBS番茄汁瓊脂和MRS瓊脂培養(yǎng)基中生長(zhǎng)呈現(xiàn)特定的形態(tài)學(xué)特征，這使其易于辨認(rèn)，在這兩種培養(yǎng)基中LGG呈大的、奶油白色、不透明菌落，且散發(fā)奶油味。
